As I was scanning through food porn on Pinterest I saw a link for homemade vegan butter substitute. My husband is sensitive to the canola oil and palm oil that is in most vegan alternatives, not to mention how expensive they are. Naturally I was intrigued at the thought of making my own.
The list of ingredients made me even more intrigued, how could almonds and a few other everyday pantry items transform into butter, I admit I was sceptical.
The recipe came together in a couple of minutes. The most time consuming part was grinding the almonds to make almond flour (I used a spice grinder that I have specifically for flours).
The final product was amazing! Tastes and melts just like butter. I have been planning a weekend BBQ and this ‘butter’ is just crying out for a cob of corn!
