Quick and Easy Creamy Avocado Pasta 

I had a full day of house work, grocery shopping, and meal prep today.  I wanted a quick dinner with little prep or cleanup.  This avocado pasta is rich, filling and delicious!


Enough dried pasta for two portions – tonight I used lo mein because it only takes 4 minutes to cook.

  • 1 large or 2 small avocados 
  • 4 tbsp lemon juice
  • 1/3 cup basil leaves
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 1 clove minced garlic
  • Tabasco sauce to taste


1. Put your pasta on to boil.

2. Put all other ingredients into a blender or food processor and blend until smooth.   Scrape the sides often.  If necessary you can add 1/2 tbsp Of pasta water to help with blending.

3. Drain cooked pasta and toss with avocado sauce (do not return to heat).

4. Serve immediately – garnish with parsley and lemon zest and it will look like you spent an hour in the kitchen!  This dish does not reheat well so only make what you need for one meal.
