Zucchini Raisin Bars with Frosting

These bars are delicious. Moist, soft, and fancy enough for company if you serve them frosted. A great use for the zucchini in your garden, or the ones filling the markets (I buy them 2 for a $1!). Give them a wash, grate them up with skins and all and make these bars.


  • 1/4 cup butter
  • 2/3 cup brown sugar
  • 1 egg 
  • 1 tsp vanilla 

Cream these together in your mixer. 

  • 1 cup flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon

Whisk these together in a bowl. 

Add the dry ingredients to the wet ones. Mix together. Now add in:

  • 1 cup grated zucchini (I really pack it into the measuring cup)
  • 1/2 cup raisins (I used golden raisins)

Spread into a greased 9 inch square pan. Bake at 350F for 25 minutes (until browning and firm). 

Let cool on a wire rack while you make frosting. 


  • 1/4 cup butter
  • 1 1/2 cups icing sugar
  • 1/4 tsp cinnamon 
  • 1-2 TB milk

Mix first 3 ingredients together. Then add milk until desired consistency. 

I like to frost the zucchini bars while still warm, it sets quite nicely  wait until cool to slice into squares or bars.

Pretty! These are great with tea or coffee, or even to take to a bake sale or a friend. But be warned, once you try them, they will not last long.
