Easy Peach Dessert

This dessert can be assembled in under 5 minutes. And it bakes in 30 minutes, so it will be done when you’ve finished supper. It’s nothing fancy, but it is a warm and delicious dessert when you don’t have the time or energy for something more labour intensive like a peach cake or crisp.

I made this tonight using peaches we bought at a fruit stand driving through the Okanagan valley. They take the dessert to the next level. In the past I have used frozen peaches, and in a pinch canned ones will do.

Vegans: use your favourite milk and vegan margarine as replacements.

  • 1/4 cup butter, melted, swirled around in baking dish
  • Peach slices (I used about 4 large ones but you can fill your dish)
  • 1 cup flour
  • 1 Heaped tsp baking powder
  • Pinch of salt
  • 1 cup sugar
  • 1/2 tsp cinnamon*
  • 1 cup milk
  • 1 tsp vanilla – optional

While the butter melts, slice the peaches and mix the batter. I melted it in my cast iron pan that I used to bake the dessert in. I sliced each peach into 8 pieces. Arrange peaches on the butter.

Mix the dry ingredients with a whisk. Add in milk and vanilla. Mix well.

Pour batter over the top. (If you have cinnamon sugar on hand, sprinkle some on top).

Bake at 350F for 30 minutes, or until golden brown.

Serve warm with vanilla ice cream.

*Try and vary your spices as you make this, a chai blend tastes amazing as well! Or any cinnamon/nutmeg combination.
