Veganized Pumpkin Banana Loaf

I have been trying to recreate the pumpkin banana bread recipe Marmalade posted here last month , but eliminating the dairy and eggs.  Tonight was attempt #3 and finally I struck pumpkin gold.

  • 1/2 cup EACH brown & white sugar
  • 1/2 cup coconut oil, melted
  • 2 flax eggs **
  • 1 teaspoon vanilla extract
  • 1 cup canned pumpkin
  • 2 bananas, mashed 
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/4 tsp ground nutmeg

Peheat oven to 350

Mix sugars and coconut oil until fully incorporated, this took 3 minutes in my stand mixer.  Add in flax, pumpkin, bananas and vanilla, mix until combined. Sift in all the dry ingredients and mix until combined.

Pour batter in a greased loaf pan.  Bake for 60-80 minutes, remove when inserted toothpick comes out clean.  Allow to cool to room temperature before serving.

** 1 flax egg = 1 heaped tbsp ground flax in 3 tbsp water (allow to sit 5 minutes)
