Want to impress with homemade ice cream without spending the money (and sacrificing the counter space?). This recipe will have you enjoying ice cream in the time it takes for it to freeze. And the best part? It takes less than 5 minutes to make. No standing in front of the stove making a custard as with traditional recipes. Just a warning: this stuff is sweet and delicious! Pair with a tangy or bitter taste to balance that sweet – coffee flavour, lemon/orange or passion fruit as I did.
- 1 1/4 cup cream
- 1 can condensed milk
- 1 tsp vanilla
- flavour of choice – I used passionfruit pulp (for coffee flavour: 2 TB espresso powder & 2 TB coffee liqueur – I will be trying a lemon zest/ limoncello variation next…)
Whip the cream until peaks form, then add the condensed milk and vanilla, mixing well. Add in your flavour ingredients. I added in grenadella pulp. Pour into freezer safe containers (I used the plastic containers with snap on lids). Freeze until solid. Scoop out with ice cream scoop.
It is really really good, and quite creamy. We also decided to spread some between the cranberry/butterscotch cookies I made. Utter bliss!
